'Eat Clean' challenge | day 6

Oh my goodness, this is heaven!

Never will I look back. Quinoa and burgers have merged and reached new heights in this amazing recipe I found on via Pinterest of course!

It's the kind of slap-everything-in-a-bowl recipe that we all love and take comfort from. The ingredients are these:
  • 1 cup of cooked quinoa (boil for 15 minutes in 2 cups of water) 
  • a handfull of grated mozarella cheese
  • chopped sun dried tomatoes
  • 1 small sweated onion
  • 3 tablespoons of flour
  • 1 beaten egg
  • salt
  • pepper
  • 2 tablespoons oil
Mix all of these in the bowl, shape as burger patties and add to a large pan with sunflower or coconut oil. You will need to flip it after 2-3 minutes and then place on paper towels to absorb any excess oil. 

I've added some fresh and crunchy broccoli bunches with lemon squeezed on top and some pepper. Never have office lunches been healthier!
